2023 Shiraz Petillant Naturel Red Wine (Signature Wine)

What is Petillant Naturel (Pet Nat) – is a natural sparkling wine made in the ancestral method. The history of Pet Nat is it was first developed in the 16th Century when a monk of the Benedictine Abbey in Saint Hilaire, France, noticed that a sealed bottle of wine had started to produce bubbles. Pet Nat is made by the winemaker bottling the wine before the primary fermentation is finished, without adding any further yeast or sugar for a secondary fermentation. The remaining natural sugar in the grapes is converted to carbon dioxide by the yeast creating pressure and an efferescene. The wine is not filtered and once opened the bubbles will lift from lees in the bottom of the bottle creating a cloudy sparkling wine. This beautiful wine allows the natural “terre Noire” of the grapes to shine through. Petillant Naturel is naturally lower in sugar.
